Stuffed garlic and cheese bread

You will need:


For the bread

Refined flour 3 1/4 cups

Sugar 1tsp

Salt 1tsp

Instant yeast 2tsp

Warm water 1 1/2 cups (approx)

Olive oil 1tbsp


For the stuffing:

Butter 6-7 tbsp melted

Garlic 3-4 cloves crushed

Mozarella cheese 1 cup

Oregano t/t

Paprika t/t

Chillie flakes t/t

Salt t/t

One egg beaten with a spoon full of milk for egg wash


Method:

  • The very first thing is to activate the yeast. Pour some tepid water, about a 1/4 cup into a bowl and sprinkle the yeast over it. Add sugar to the yeast and stir. Cover with a kitchen towel for about 5 min till it rises up.

  • Add the flour to your stand mixer with the salt, give a quick stir and make a well in the center.

  • Pour the ready yeast in the center with the olive oil.

  • Run the mixer on low first and then medium till the dough comes together.

  • Now it’s time to get your hands to do some work! Get the dough to a clean surface dusted with flour. If it’s too sticky just add a spoon-full of flour to the dough while you knead it with your hands. Pull and stretch the dough and bring it together into a soft and firm ball.Keep the dough slightly oiled in a bigger bowl to prove for about 40 minutes to an hour in a warm place covered with plastic wrap.

  • The dough should double in size after about 40 minutes. Bring out and punch it down. Roll it into a ball again and divide it into two equal halves. Roll out both the balls into circular shapes, half inch thickness each and smear with the melted butter,cheese,garlic,sprinkle salt,chillie flakes and oregano on only half side of the circular dough of each of the rolled doughs.

  • Cover and make two semi circles pinching down the edges with your fingers so the filling does not leak and give a few gashes lightly on top. Brush the top with egg wash and sprinkle some seasoning over them.

  • Place them on a baking tray covered with parchment paper and let them rest again for a second prove. Keep in a warm place covered with a kitchen towel for 20-30 min. In the meanwhile pre-heat the oven to 180° degrees celcius.

  • Bake for 25-30 min depending on your oven. You can check the breads after about 20 min,tap them,if they feel hollow they are ready! Best served straight out of the oven!
